Okay, so a post about oysters is almost mandatory with a site name like ‘fjord’ (inlet). Also it has become a New Years evening tradition to have oysters as a starter-snack during the Queens annual speech at six o’clock.
While oysters are a delicacy allover the world there is something very fancy about the way we eat them. Fresh and raw, or cooked in someway, in one go and maybe with a glass of champagne.
With the company and guidance of our closest friends (as they have the know-how about oyster-plucking) our New Years’ tradition starts by a trip to the fjord, finding the perfect spot in a corner of the inlet where the oysters live.
With calm water and a good steady eye for spotting the delightful treasures, we always manage to find as many as needed. Now a true viking, will have one right there, if not just to check the quality.
Then comes the process of cleaning and opening the oysters – which can take a while, if you are unlucky.
And then ‘bon appetit’
